In sugar solutions, electrical attraction acts between sugar molecules and water molecules. Therefore, at higher concentrations, moisture is less likely to evaporate. In addition, sugar molecules are arranged on the surface of the solution without evaporation, reducing the surface area by which water molecules can evaporate.
Eventually, the vapor pressure of the solution in which the non-volatile solute is dissolved becomes lower than the vapor pressure of the pure solvent.
